I'll probably think of more, but mine are:
See the Nemo show at Animal Kingdom theme park at Walt Disney World Orlando (only ever seen the first bit of this)
Visit Starring Rolls for some cake!!!
Get an ice cream sundae from Ghirardelli's
Take as many photos as possible of Flower & Garden Festival
Visit Fort Wilderness
Breakfast at Captain Cook's at the Polynesian

For the trip that is only 2 months away ...
1 - make the most of the Free Dining offer
2 - be patient and ensure I get the photos I want before moving on
3 - enjoy Flower & Garden Festival
4 - enjoy the Star Wars weekend
5 - Ride Star Tours 2
6 - Pop to IofA to see Harry Potty
7 - visit a Disney spa

To take my will-be-by-then wife and show her it's fun for adults too (she's of the "you should only do it with kids" party)
To stay in a moderate or deluxe...
Just going again will be good! Looking at 2013 at the rate... six year gap is far too long!!
