Capriole Farm Sofia - A soft goat cheese that's aged for about five days. Sofia is remarkable in that it's both mild and full of flavor. Milky, fresh tasting, and smooth, with layers of wrinkled mold.
Zamorano - This hard Spanish sheep's milk cheese, noticeably nuttier and richer than its cousin, Manchego. Zamorano has a moderately gamey, sheep's milk-flavored bite and texture.
Tessiner Geisskaese - This is a hard, raw goat milk cheese from the Italian-speaking part of Switzerland. This seasonal mountain cheese is made like a Tomme de Savoie, with a slight, sharp taste.
Flixer Sheep - Made by Mario Contin in Eastern Switzerland, Flixer is one of the rarest cheeses produced anywhere. The flavor is at once complex, yet subtle, with hints of chestnuts.
Laura Chenel Cabecou - Made with 100% cultured, pasteurized goat's milk, these rich and creamy chevre disks swim in a sea of extra virgin olive oil, bay leaves, and other herbs and spices.
