The salt is from an ancient sea bed near Redmond, Utah and contains unique flecks of color that are the result of more than 50 natural trace minerals.

Bijou (Goat)
Bijou is the French word for "jewel", and these petit, glistening cheeses are the perfect embodiment. Styled after the classic Crottin de Chavignol, Bijou is a pasteurized goat's milk cheese produced by the Vermont Butter and Cheese creamery in Websterville, Vermont. They are semi-firm in texture, and bear the typical, subtle tang of fresh goat's milk cheese.

Fromage d'Affinois de Brebis

This cheese is a soft, bloomy-rind sheep's milk cheese from the Rhone-Alps region in France, produced by the well renowned Guilloteau creamery. The paste is mild and rich while the rind provides a flavor and texture that is savory and builds complexity.

Rogue River Blue-US (Cow)
Rich, creamy, and somewhat sweet, Rogue River Blue is made with raw milk and covered in Syrah grape leaves that are macerated in an Oregon pear brandy; this imparts a fruitiness to the flavor.
