Coca-Cola BBQ Sauce Recipe from Boma, Animal Kingdom Lodge

 
Ingredients

1 each Spanish onion, diced fine
1 oz garlic, minced fine
2 each jalapeno peppers, minced fine and seeded
4 oz brown sugar, packed
2 x 12 oz cans Coca-Cola
2 oz white vinegar
4 cups ketchup
1 oz olive oil

Yield: 10 servings
Method

In a heavy-bottom saucepot over medium high heat, add the olive oil and onions and cook for three minutes until onions are brown.

Add the garlic, jalapeno peppers, brown sugar, and cook for one minute.

Deglaze with the Coca-Cola and cook until a syrup consistency.

Add the ketchup and white vinegar.

Lower the heat and simmer for 20 minutes.
