Cured Pork Loin Recipe from Boma, Animal Kingdom Lodge
6 2/3 pounds Pork loin
1 pound Kosher salt
1 pound Sugar
1 pound Brown sugar
2/3 cup Minced herb (Thyme or rosemary), chopped fine
2/3 cup Ginger
2/3 cup Cinnamon
Yield: 10 servings
In the hotel pan, mix salt and brown sugar.
Coat the pork in the salt/sugar mixture and let coat overnight.
Take out the cured pork and rinse in cold water.
Grill or rotisserie until medium rare.
