Fennel and Smoked Fish Salad Recipe from Boma |

Ingredients
1 small Onion, julienned
1 each Fennel Bulb, sliced thin
1 each Lemon, zest and sliced
½ lb Smoked Fish, diced
½ cup Parsley, chopped
Dressing:
½ cup Lemon Juice
1 tsp White Wine Vinegar
1 each Lemon, zest
¼ cup Olive Oil
2 Tbsp Sugar
2 Tbsp Ground Coriander, toasted
To taste Salt and Pepper
Yield: 4 servings
Method
Make the dressing.
Mix all the ingredients together with the dressing.
Let marinate at least 15 minutes.
Adjust seasoning.
