Salmon and Black Bean Burger Recipe from WDW Swan & Dolphin

 
Ingredients

2 ½ llbs. Salmon Fillet, skin off
2 ¼ oz. Preserved Black Beans **
1 ½ oz. Cilantro, chopped
½ oz. Kosher Salt
½ oz. Lemongrass, chopped very fine
¾ fl oz. Lemon Juice, fresh squeezed
½ oz. Jalapeno Pepper, seeds removed then diced fine
½ oz. Green Onion, thinly sliced
1 fl oz. Fermented Fish Sauce **
1 fl oz. Vegetable Oil

NOTE: (** Item can be found at any Asian food store)

Yield : 8 servings


Method

Have your fish market or local grocer grind the salmon to chili grind.

Chop the black beans to coarse chop.

Place all items (except the oil) in large bowl and mix together well.

Divide into 6 oz. portions and pat into hamburger size patties.

Heat a fry pan over medium heat, coat with the oil.

Pan sear each patty for 2 -3 minutes on each side until salmon is medium rare. (May cook longer for desired doneness.)

Serve on hamburger bun with mayo or with a salad.
