Sweet Potato Mash Recipe from House of Blues |

Ingredients
1 1/4 gallons water for boiling potatoes
2 1/2 pounds sweet potatoes
2 tablespoons butter
1 1/2 teaspoons salt
1/4 teaspoon white pepper
2 tablespoons, plus 1 1/2 teaspoons heavy cream
1/8 cup milk
Yield: 10 servings
Method
Peel and trim potatoes.
Cut into chunks and place in pot of boiling water.
While potatoes cook, combine cream and milk with butter and salt and white pepper.
Let cook over low heat until thoroughly heated.
When potatoes are fork tender, drain in a colander and pour into a large mixing bowl.
Mash potatoes.
Add cream mixture and continue mashing until the desired consistency is reached.
