Mount Tam (Cow)
MT TAM, Cowgirl Creamery's signature cheese, is a pasteurized, smooth, creamy, elegant, triple-cream. It is made with tasty organic milk from the Straus Family Dairy in Marin County California. MT TAM is firm, yet buttery with a mellow, earthy flavor reminiscent of white mushrooms.

Seahive-US (Cow)
SeaHive is made by the Beehive cheese company in Uintah, Utah. This cheese is made of pasteurized milk from Jersey cows and is hand rubbed with Beehive wildflower honey and local Redmond sea salt. The honey is harvested from a local farm where the bee's visit wildflowers and fruit orchards. The salt is from an ancient sea bed near Redmond, Utah and contains unique flecks of color that are the result of more than 50 natural trace minerals.

Bijou (Goat)
Bijou is the French word for "jewel", and these petit, glistening cheeses are the perfect embodiment. Styled after the classic Crottin de Chavignol, Bijou is a pasteurized goat's milk cheese produced by the Vermont Butter and Cheese creamery in Websterville, Vermont. They are semi-firm in texture, and bear the typical, subtle tang of fresh goat's milk cheese.

Fromage d'Affinois de Brebis
Fromage d'Affinois de Brebis is a soft ripened, pure sheep milk cheese with a creamy texture and a sweet taste. This cheese is a soft, bloomy-rind sheep's milk cheese from the Rhone-Alps region in France, produced by the well renowned Guilloteau creamery. The paste is mild and rich while the rind provides a flavor and texture that is savory and builds complexity.

Rogue River Blue-US (Cow)
Rich, creamy, and somewhat sweet, Rogue River Blue is made with raw milk and covered in Syrah grape leaves that are macerated in an Oregon pear brandy; this imparts a fruitiness to the flavor. Rogue River is made at the Rogue Creamery in Central Point, Oregon. The cheese is seasonal so that customers must often wait months to purchase it.
