Blackened Mahi Sandwich from Kona Cafe, Polynesian


1 Ea. 6 oz Mahi filet
1 Ea. Hamburger bun
1 ½ oz Cool down sauce
1 oz Green leaf lettuce
½ oz Blackening spice
6 oz French fries
1 Slice Tomato

Yield: 1 serving

Cool Down Sauce:
¾ Cup Mayonnaise
1/3 oz Capers
1/8 oz Cilantro
3/8 oz Anchovy filets
1/8 oz Frozen lemon juice
1/8 oz Dry mustard
To taste Salt and pepper
(Yield: serves 10)


Rub filet with oil and then coat well with blackening seasoning.

Sear on very hot iron skillet.

Put cool down sauce on bottom of bun.

Put fish on bun and garnish with lettuce and tomato.

Cool Down Sauce:
Puree everything in blender or robot coupe until mixed well.
Add mayo and continue until mixed well.
