Toasted Couscous with Spinach Leaves Recipe from Jiko, Animal Kingdom Lodge


1 1/2 tablespoons butter
1 1/2 cups dry couscous (1 10-ounce package)
2 cups fresh spinach leaves
1 teaspoon kosher salt
1/4 teaspoon fresh ground pepper


In a large stainless-steel saucepan, melt the butter, add the couscous, and toast over medium heat, stirring often, until golden brown (about 8 minutes). Pull the pan from the stove, pour 2 cups of cold water over the toasted couscous, and quickly layer the spinach leaves on top. Immediately cover the pan with 2 layers of plastic wrap. After steaming for 5 minutes, remove the plastic wrap, and season with salt and pepper to taste.

You can make this the day before, omitting the spinach. Cool and refrigerate. When ready to serve, add the spinach leaves and 1/4 cup of water, cover the pan, and warm slowly over medium-low heat.
